Wondering what's this keto diet every health-freak is talking about? Well, I'm no dietician or a health expert but from my knowledge, a Ketogenic Diet, in short, the keto diet is a low-carb and high-fat diet. It simply means that this diet replaces carbohydrates with fats.
Besides reducing the intake of carbs and replacing them with high fats, the keto diet has numerous health benefits. The most common in the list is weight-loss which is probably the chief reason many people tend to go on these diets. When I say "diets" I mean there are several types under this category.

The list of health benefits of this diet is surprisingly long.
Let's say weight loss is our primary aim, but aside from that keto diets keep the sugar as well as insulin levels of blood in balance. It reduces the risks of several diseases. Most importantly it reduces the outbreak of acne and aids with PCOS symptoms. Cancer and several heart diseases have also been cured with keto diet.
After scanning through several keto diet plans I came up with a simple keto diet soup recipe idea of my own.
Requiring veggies from your backyard and a few spices from your kitchen pantry, this health soup can be prepared in an hour.
Ingredients
1 medium onion- chopped
1 carrot- chopped
1 large tomato- diced
mixed peppers- 1/2 cup, chopped
mushrooms- 1/2 cup sliced
cabbage- 1 cup, shredded
salt & pepper- 1/2 tsp each
oregano- 1/2 tsp
garlic paste- 1 clove, finely chopped
preservative-free/fresh homemade tomato puree- 1/4 cup
cornstarch- 5 tsp
vegetable broth- 1 cup
water- 5 cups
1. In a large vessel, add 5 cups of water and 1 cup of vegetable broth. Turn on the heat.
2. Meanwhile, place onion, carrot, tomato, mixed pepper, mushrooms, and cabbage on your cutting board. Chop them finely.
3. In the heated water, put all the chopped veggies, salt & pepper, oregano, and garlic. Cover with lid and start with slow flame/low heat. Do not remove the lid after this. Check time.
4. After about 45 mins, remove the lid and stir tomato puree and cornstarch mixed-in-water. The consistency should be according to your preference. Cover again and cook for another 10-15 mins on slow flame.
5. Once it is done, check if the veggies are tender and soggy. It is when the soup is done. Ladle out the soup in the soup bowl.
NOTE:
❤️ Cook the soup on a slow flame for a long time so that all the vitamins and nutrients get infused in the water, without too much water getting evaporated.
❤️ Do not remove the lid too often because the aroma of veggies and oregano may get lost in the air.
❤️ Adding cornstarch, in the beginning, will make the consistency thicker and the veggies may not cook well.
Veggies should be tender and soggy for ease in chewing them.
❤️ Since the soup is cooked well it can be stored in fridge for a couple of weeks, provided you don't put a wet spoon in it.
