Spinach Is Unpalatable But This Healthy Cream Of Spinach Soup Isn't


Can't agree more, munching veggies may be healthy but it ain't anu fun. I mean we ain't no cows to ceaselessly chomp on leafy veggies all day long but we gotta keep the damned body in shape, is there any other option? Yeah, there could be, like 
1. early morning detoxifying distasteful green smoothies
2. and...   yeah, thanx, I'm good. Wait, how about soups? No, not those runny, watery, tasteless soups they give in hospitals, I'm talking about the delicious aromatic ones they serve in top-notch restaurants?

I wonder why people don't prepare soups on a daily basis. Like, they are quick, easy, pretty simple, less time consuming and require just the basic ingredients you find in your kitchen. 

Anywise lets directly jump to this healthy creamy spinach soup I tried once and didn't expect from myself to make it over and over again. 

The method I will be showing here will retain all the nutrients of spinach without overcooking it and will constitute calcium and protein from milk and cream too.

Ingredients

olive oil/butter for frying

🍃spinach - 3 cups, chopped, washed and drained
🍃onion- 1 no. small, roughly chopped 
🍃garlic chopped/paste- 1 tsp
🍃salt and black pepper- 1 large pinch
🍃dairy milk (fat/non-fat) - 1 cup
🍃heavy cream - 1 tbsp 
🍃coriander for garnish

1. In a small pan/saucepan, add 1 tbsp of olive oil/butter.

2. When the oil is heated, add chopped garlic and stir. 

3. Before the garlic turns brown add roughly chopped onion and sautee. 

4. When you see the onions turn tender and translucent, add your spinach and mix. Sprinkle a lil salt and pepper (according to your preferences) and cover with a lid. Cook on low flame for 5-7 mins until you see the spinach has begun to wilt. Turn off the flame and remove the lid to completely cool it down. Remember not to overcook them, we need to retain all the nutrients of the leaves.

5. Once it cools down, add the mixture to the blender and blend until it becomes a soft puree.

6. Transfer the same to the same pan and add milk to it. cook on low flame while simultaneously stirring it. Cover with the lid and let it cook for 2 mins then turn the flame off. 

7. Mix a tbsp of heavy cream or just garnish on top with a coriander leaf and serve it hot.
