The Divine Pistachio Bread/Cake With Cinnamon And Coffee By Yossan

When you are cooking/baking, you have a vision, you have a clear instruction(maybe?), then you go through the actual process of making it and whatever will be will be. But unlike always, this time I didn't have a precise recipe on my mind, I just revamped a standard cake recipe, throwing in the random'est ingredients I could find and guess what? MeuDeus, it actually came out better than I expected. I get a real kicker when I try to make something and it comes out exactly like what I envision or even better than that. I give myself a smug Hi5 or sometimes an encouraging pat on the back. My intentions are for the sheer need for sweets and dessert to always be ready in hand and around the house. And for me its a great hobby because I always get to eat what I would otherwise buy, so it's just great all around. 

My sweet sister, B, has forever been my inspiration, who satiates my sweet tooth cravings with her amazing desserts and the search for new and more exciting ways to incorporate nuts into breads and cakes. I can't really share my food with my family as of now, so I've resorted to learning and baking as much as I can for now and show off my killer skills when I see them again (if only to rub my new-found skills in my sister's face and steal her title. Wish me luck *wink*)

So I decided to bake Pistachio Bread (more like a cake) with a hint of cinnamon and coffee which is just perfect for any festive occasion or for even as a simple holiday or birthday treat requiring a lot less work and time!

The aroma of coffee just stirs me in my bed in the morning and right now my house is filled with a divine mix of freshly baked pistachio bread and an arousing aroma of coffee and cinnamon.

Put on your aprons and let's head to the kitchen

Ingredients

Flour- 4 cups
Brown sugar- 1 cup
White sugar- 2 cups (possibly if powdered one)
Eggs- 2
Ground pistachio- 1 cup
Chopped pistachio- 1/2 cup
Oil- 2 tbsp (preferably,flavorless)
Vanilla Extract- 2 tsp
Baking Soda- 2 tsp
Brewed coffee- 1/2 cup
Ground cinnamon- 1 1/2 tsp

1. Preheat your oven/gas stove. Butter and flour your baking pans

2. Start by sieving flour and baking soda in a large bowl followed by incorporating all the dry ingredients; brown sugar, powdered sugar, ground, and chopped pistachios.

3. In a separate bowl, mix all the wet ingredients; eggs, oil, vanilla extract, cinnamon-infused coffee. 

4. Now combine the wet and the dry ingredients and mix it well. Pour the batter into the buttered pans and garnish the top with chopped pistachios. Bake for 30-35 mins or until the toothpick inserted comes out perfectly clean. 

Enjoy your freshly baked pistachio bread with a topping. Almond icing or chocolate glaze goes perfectly with it. 

NOTE:
1. You can brew your coffee with cinnamon sticks instead of adding ground cinnamon.
