I remember the first cake I ever baked was from Betty Crocker's and I was dazzled to see how perfectly it turned out. The sponginess and the fullness of the cake, not to mention the perfect balance of its taste and flavor, were beyond expectations. Since then the dark chocolate cake mix box was the closest thing to my heart.

So this time I decided to try something new with it. Coookkiiesss!! Yup. And how did they turn out? Just Perfect! Perfect to go with hot/cold milk, perfect to go with whipped cream or ice cream, and perfect to simply MUNCH! Excited to see what all goes into it? Follow me.

Ingredients

I box of Betty Crocker's Dark Chocolate Cake Mix

2 eggs

1/2 oil

2 tbsp flour (optional)

1. In a large bowl whisk 2 eggs then add 1/2 oil.

2. Empty 1 box of Betty Crocker's Dark Chocolate Cake Mix in the wet ingredients and using a spatula mix the dough well. Cover the bowl with cling wrap and put the dough in the fridge for half an hour. Keeping the dough chilled for some time lets you make perfect balls out of the dough.

3. After 1/2 an hour pull the bowl out of the refrigerator and check if you are able to scoop and easily make balls with it. If the dough is too soft then add 2 tbsp of cake flour. Now knead the dough so that the flour gets incorporated well. If the dough is of the desired consistency then skip the flour step.

4. Set your oven to 180℃ and preheat for 10 mins while you line your baking tray with parchment paper.

5. Now scoop a teaspoon full of the dough and make smooth round balls and place them on the tray with 2 inches spaced gap between each ball.

6. Bake the cookies for 20-25 mins on the top/bottom heat setting. Once done, pull the tray out and at this stage, you can see the cookies are soft. Leave them on a wire rack to completely cool down and harden and TADAA! Your cake mix cookies are good to go with milk or ice cream.
