DIY Low-Carb Beef Stroganoff

Most people find it punishing and tedious to stay on a vegetarian diet for a long time. It's totally comprehensible; cutting down on sugar and junk was too much already but feeding on veggies and fruits alone is exasperating. 

How 'bout some low-carb meat? Well, You just need to adjust some ingredients to recreate the same recipe more flavourful and less in calories. Let's prepare a quick low-carb beef stroganoff that can be served with pasta or any noodles of your choice.

Ingredients:

Oil for frying

-500 gm beef, diced
-Himalayan black salt & pepper
-1 medium onion, thinly sliced
-Portobello mushrooms- 1 1/2 cup, sliced
-Beef broth- 1 cup
-Low-fat fresh cream- 100gm
-1 zucchini 
-Spring onion for garnish

1. In a bowl, season the beef dices with a dash of salt and pepper. Set it for at least an hour.

2. In a heated pan, add some oil and sparsely place the seasoned beef dices and cover with a lid. Turn them over occasionally until all the pieces are soft and tender. Once they are done, plate them aside.

3. In the same pan, add some more oil, and sauté the onions and mushrooms. Each time you cook, cover it with the lid so that the nutrients do not get lost. 

4. When the onions have caramelized and the mushrooms lost all moisture, pour the beef broth and scrape the bottom of the pan. 

5. While the broth is cooking, mix a teaspoon of water in fresh cream before adding it to the broth in order to prevent it from cuddling.

6. Once the liquid starts to thicken, add the beef dices and stir. It is optional to add a lil salt and pepper because remember your broth is salty, so just a sprinkle of salt will suffice.

7. Cook for a few mins and then dish it out with some sliced zucchini on the side. 



Health Note:
❥Here, I'm using the Himalayan black salt as it is very healthy and a good source of iron. Unlike any other regular salt, the black salt doesn't cause water retention and prevents bloating as it is low on sodium compared to regular white salt. Researches say that black salt also helps combat cancer and helps in substantial weight loss.

❥Portobello Mushrooms are a good source of Dietary Fiber, Riboflavin, Niacin, Pantothenic Acid, Phosphorus, Potassium, Copper, and Selenium. Mushrooms can be used as a substitute for meat.
